Filleting technique for halibut is very different than what is needed for most other fish species. This video shows a deckhand doing the task in about a minute. The lady’s feat is both impressive and scary. If you want to date her, better keep all sharp objects locked up during arguments. Kidding aside, the woman in the video could hold up as a contender to the title of the fastest time to fillet a fish.

The unidentified woman makes filleting look as easy as finding snow in the Arctic. Getting all the meat out of a halibut is tricky. Can you do better than this woman who seems as if she had finished before she even started?

So what are the steps to properly fillet a fish to get all of the meat?

• Put the fish on a non-slip surface. Use a sharp fillet knife, always cutting away from yourself.
• You need to segment each side of the fish into two separate sections with the spinal column as the dividing point.
• Behind the gills and pectoral fin, make an incision down to the backbone.
• Turn the knife horizontally and cut all the way down to the tail, using the backbone as your guide.
• Repeat the previous step on the other side.
• The skin can be peeled off by making an incision up from the tail end and slicing away from yourself between the flesh and skin.
• Remove the pin bones with tweezers.

Choosing your knife is also important to how you make your cuts. Use a long, flexible blade which should be kept razor sharp. Maintaining your knife is paramount. Your knife’s blade should be protected in a dry place.

You can fillet a fish in three ways. The first method is called the cutlet which is done by slicing from behind the head of the fish, round the belly and tapering towards the tail. The second method is called single which produces two separate fillets. The third method is called the “J” cut which involves the removal of the pin bones by cutting a “J” shape from the fillet.

The steps discussed above will be accurate for most fish. However, some varieties have other methods. You can ask for help from others who have more expertise in filleting fish.

According to British celebrity chef Jamie Oliver, filleting a fish is kitchen task that should not be avoided. A little bit of knowledge and simple knife skills are what you need to do it perfectly every time.
